Smoked Sausage & Rice Skillet

About 30 minutes Serves 4

Ingredients

  • 1 package Azar smoked sausage, sliced
  • 1 tablespoon cooking oil
  • 1 bell pepper, sliced
  • 1 small onion, sliced
  • 1 can diced tomatoes, drained
  • 2 cups cooked rice
  • 1 teaspoon preferred Cajun or all-purpose seasoning
  • Sliced green onion for serving

Method

  1. Warm the oil in a large skillet over medium heat. Brown the sliced sausage on both sides.
  2. Add the bell pepper and onion. Cook until softened and lightly browned.
  3. Stir in the tomatoes, cooked rice, and seasoning. Cook until everything is hot and evenly combined.
  4. Top with green onion and serve straight from the skillet.

  1. Heat the oven to 425°F and line a large sheet pan.

  3. Add the sausage, peppers, onion, and remaining oil. Toss carefully and spread into one layer.
